These juicy, golden-seared chicken bites are tossed in a rich garlic butter sauce that’s bursting with flavor. Quick to make and low in carbs, they’re perfect for a keto dinner, lunch prep, or even a protein-packed snack.
1.5 lbs (680g) boneless, skinless chicken breasts (cut into bite-sized pieces)
Salt and black pepper, to taste
1 tsp smoked paprika
1/2 tsp garlic powder
2 tbsp olive oil (or avocado oil)
4 tbsp unsalted butter
6 cloves garlic, minced
1 tbsp fresh parsley, finely chopped (plus more for garnish)
1 tsp lemon juice (optional, for brightness)
1️⃣ Prep the Chicken
Pat chicken pieces dry with paper towels. Season with salt, pepper, paprika, and garlic powder. Toss to coat evenly.
2️⃣ Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer (do in batches if necessary) and sear for about 3–4 minutes per side, until golden brown and cooked through. Remove from pan and set aside.
3️⃣ Make the Garlic Butter Sauce
In the same pan, reduce heat to medium. Add butter and minced garlic. Stir constantly for about 30–60 seconds, until garlic is fragrant but not browned.
4️⃣ Combine and Coat
Return the cooked chicken bites to the pan. Toss to coat in the garlic butter sauce. Cook for another 1–2 minutes, stirring occasionally.
5️⃣ Finish and Garnish
Add chopped parsley and a squeeze of lemon juice if using. Serve hot, garnished with more parsley.
