2 cups cooked jasmine or long-grain rice (day-old is best)
8 oz beef (flank steak or sirloin), thinly sliced
2 tablespoons unsalted butter
1 tablespoon canola oil
4 cloves garlic, minced
2 green onions, sliced
2 eggs, lightly beaten
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
½ teaspoon sesame oil
Salt and pepper, to taste
Heat oil in a skillet over medium-high. Sear beef until browned. Remove and set aside.
Melt butter in the same pan. Add garlic and sauté until fragrant.
Push garlic to one side, add eggs, scramble gently, then combine.
Add rice and break up clumps. Stir-fry until heated through and slightly crisp.
Return beef to the pan. Add soy sauce, oyster sauce, and sesame oil. Toss everything.
Finish with green onions. Serve hot.
