  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp chili garlic sauce (adjust for heat preference)
  • 1 tsp white vinegar
  • 1/4 tsp smoked paprika (plus extra for garnish)
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh chives or parsley, finely chopped, for garnish

Instructions

  • Boil the eggs: Place eggs in a saucepan and cover with water. Bring to a boil, then lower the heat and simmer for 10 minutes. Transfer to an ice bath and let cool completely before peeling.
  • Prepare the yolks: Slice the eggs in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and set the whites aside.
  • Mix the filling: Mash the yolks with a fork. Add mayonnaise, Dijon mustard, chili garlic sauce, white vinegar, smoked paprika, garlic powder, salt, and pepper. Mix until smooth and creamy. Adjust seasoning to taste.
  • Fill the eggs: Use a spoon or a piping bag to fill the egg whites with the yolk mixture.
  • Garnish: Sprinkle with smoked paprika and garnish with chopped chives or parsley for a fresh touch.
