For the Crust:

Instructions
Step 1: Prepare the Crust
- Prep: Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
- Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until fully combined.
- Form Crust: Press the mixture evenly into the bottom of the springform pan to create a compact layer.
- Bake: Bake the crust for about 10 minutes, then remove from the oven and set aside to cool.
Step 2: Make the Cheesecake Filling
- Beat Cream Cheese: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add Eggs: Add the eggs one at a time, beating after each addition to fully incorporate.
- Vanilla & Sour Cream: Stir in the vanilla extract and sour cream until smooth.
- Pour Filling: Pour the cheesecake mixture over the cooled crust, spreading it evenly.
Step 3: Bake the Cheesecake
- Bake: Place the cheesecake in the oven and bake for 50–60 minutes, or until the center is set but still slightly jiggly.
- Cool Down: Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour to prevent cracks.
- Refrigerate: Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours (or overnight) to set.
Step 4: Prepare the Strawberry Topping
- Strawberries & Jam: In a small saucepan, warm the strawberry preserves over low heat until it becomes slightly runny. Toss in the halved strawberries to coat them.
- Topping: Once the cheesecake is fully chilled, arrange the strawberries on top in a beautiful pattern. Drizzle any remaining strawberry glaze over the top.
