  • Total Time: 6 hours

Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs (about 10 full graham crackers)
  • ⅓ cup sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

For the Strawberry Topping:

  • 1 lb fresh strawberries, hulled and halved
  • ½ cup strawberry preserves or jam
  • 2 tablespoons sugar (optional, for extra sweetness)

Instructions

Step 1: Prepare the Crust

  1. Prep: Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until fully combined.
  3. Form Crust: Press the mixture evenly into the bottom of the springform pan to create a compact layer.
  4. Bake: Bake the crust for about 10 minutes, then remove from the oven and set aside to cool.

Step 2: Make the Cheesecake Filling

  1. Beat Cream Cheese: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  2. Add Eggs: Add the eggs one at a time, beating after each addition to fully incorporate.
  3. Vanilla & Sour Cream: Stir in the vanilla extract and sour cream until smooth.
  4. Pour Filling: Pour the cheesecake mixture over the cooled crust, spreading it evenly.

Step 3: Bake the Cheesecake

  1. Bake: Place the cheesecake in the oven and bake for 50–60 minutes, or until the center is set but still slightly jiggly.
  2. Cool Down: Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour to prevent cracks.
  3. Refrigerate: Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours (or overnight) to set.

Step 4: Prepare the Strawberry Topping

  1. Strawberries & Jam: In a small saucepan, warm the strawberry preserves over low heat until it becomes slightly runny. Toss in the halved strawberries to coat them.
  2. Topping: Once the cheesecake is fully chilled, arrange the strawberries on top in a beautiful pattern. Drizzle any remaining strawberry glaze over the top.
